Great new recipe – Janelle once again outdid herself with this scrumptious recipe - 

 

Berry Muffins

Ingredients:
2 cups SR Flour
¾ cup brown sugar
1 tin blueberries or raspberries, drained
1 egg
¾ cup buttermilk
½ cup vegetable oil

Sift dry ingredients into bowl.  Add other ingredients and last of all the blueberries/raspberries and mix until just combined.  Spoon into muffin cases and bake in moderate oven 20 -25 mins.  Serve dusted with icing sugar.  Makes about 15.
Can substitute tin fruit for frozen if desired.
