Savoury pinwheels

This is a great recipe for a snack or just to put in the freezer for the kids snacks at school.

Ingredients

  • 250gm or 8oz of puff pastry or equivalent in ready made sheets
  • Puree tomato paste
  • 1 tablespoon of mixed herbs
  • 4 rashes of bacon
  • Grated parmesan cheese or a cheese that you like
  • A beaten egg for glazing

This recipe can be altered to your taste. The pinwheels are a bit like sandwiches and you can alter the filling to whatever is your taste. Prawns or crabmeat, shallots or sun-dried tomatoes can be substituted or added to vary the mixture. For a sweet pinwheel you can add sultanas, brown sugar and nutmeg and cinnamon.

Method

  1. Spread your puff pastry sheets out on the cutting board.
  2. Spread pastry with tomato paste, herbs, bacon, cheese etc
  3. Roll up pastry, like a sponge roll - starting at the edge and using a sharp knife cut into 1cm/½" slices.
  4. Place on a lightly greased baking tray and glaze.

Bake in a very hot oven for 12 to 15 mins until golden.
