Savoury pinwheels
This is a great recipe for a snack or just to put in the freezer for the kids snacks at school.
Ingredients
- 250gm or 8oz of puff pastry or equivalent in ready made sheets
- Puree tomato paste
- 1 tablespoon of mixed herbs
- 4 rashes of bacon
- Grated parmesan cheese or a cheese that you like
- A beaten egg for glazing
This recipe can be altered to your taste. The pinwheels are a bit like sandwiches and you can alter the filling to whatever is your taste. Prawns or crabmeat, shallots or sun-dried tomatoes can be substituted or added to vary the mixture. For a sweet pinwheel you can add sultanas, brown sugar and nutmeg and cinnamon.
Method
- Spread your puff pastry sheets out on the cutting board.
- Spread pastry with tomato paste, herbs, bacon, cheese etc
- Roll up pastry, like a sponge roll - starting at the edge and using a sharp knife cut into 1cm/½" slices.
- Place on a lightly greased baking tray and glaze.
Bake in a very hot oven for 12 to 15 mins until golden.
