THIGH STICKING FOOD!
Ingredients
- 60 g of butter, at room temp
- 1/3 cup of caster sugar
- 1 egg lightly beaten
- 1 cup of raising flour
- 1 tablespoon of strawberry jam
- Sifted icing sugar mixture to decorate
- Butter Cream
- 60 g butter at room temp
- 1 cup of icing sugar mixture
- 1 tsp vanilla extract
- 1 tsp milk
- Pink food colouring
Method
- Beat butter and sugar with an electric mixer until light and creamy. Add egg and beat to combine. Stir in flour and mix to soft dough. Refrigerate, covered for 30 minutes, or until firm.
- Roll 2 level teaspoons of mixture into balls and place about 3 cm apart on baking paper- lined oven trays. Using your finger or the end of a wooden spoon, press a 1 cm deep hole into half of the balls. Carefully spoon a little of the jam into each hole. Slightly flatten remaining balls using the back of the spoon.
- Cook in a moderate oven (190ºC) for about 8 minutes or until golden brown. Let Cool
- To make butter cream, beat butter with an electric mixer until light and creamy. Gradually beat in icing sugar until combined. Beat in vanilla and milk. Add a few drops of food colouring to tint butter cream pink.
- Mix well
- Spoon butter cream into a piping bag fitted with a 1.5 cm fluted nozzle. Pipe butter cream on plain biscuit bases and top with jam biscuits. Serve dusted with icing-sugar mixture.
