Zucchini slice
I came across this wonderful little recipe over Christmas, it is quick and easy to make and great for the vegetarians.
Ingredients
- 375gms zucchini
- 1 large onion
- 3 rashers of bacon (you can buy smoked soy products to substitute)
- 1 cup of grated cheese
- 1 cup of self raising flour
- ½ cup oil
- 5 eggs
- salt and pepper to taste
- I added 1 teaspoon of whole seeded mustard & 1 teaspoon of crushed garlic
Method
Grate unpeeled zucchini coarsly, finely chop onion and bacon (optional). Combine zucchini, onion, bacon, cheese, sifted flour,oil and lightly beaten eggs. Season with salt and pepper. Pour into well-greased lamington tin (base measures 16cm x 26cm). Bake in moderate oven 30 to 40 mins or until browned and serves 4 – 6. Can be cut cold and frozen till needed.
